Green Chicken Enchilada Casserole (aka the easiest family dinner ever!!!)
Okayyyy… if you’ve been looking for the best easy weeknight dinner, this Green Chicken Enchilada Casserole is IT. Literallyyyy would be my LAST MEAL.. my fav homecooked dinner ever!! Think creamy, cheesy, melty goodness layered up in one big pan. It’s basically comfort food goals. The best part? You can throw it together with simple ingredients, and it feeds a crowd, aka perfect for busy moms, big families, or even meal prep. It’s so easy to make.. and that’s coming from me…. Iykyk!!!
This recipe is loaded with flavor thanks to the salsa verde chicken, mild green enchilada sauce, and ALL the cheese.
Ingredients You’ll Need
3 chicken breasts (cooked in salsa verde in the crockpot on high 4 hours or low 8 hours — or just grab pre-shredded chicken from the store if you’re in a rush!)
2 large cans of mild green enchilada sauce
1 jar of salsa verde
8 oz. sour cream
1 small can of cream of chicken soup
1 can diced green chiles (mild)
1 can of black olives (optional but sooo good!)
2–3 bags of shredded cheese (I do a mix of cheddar + Monterey Jack, but use whatever you love)
15 tortillas
Butter (for spreading on tortillas)
How to Make It
Shred your chicken: Once cooked in salsa verde (or store-bought), shred and toss in a big mixing bowl.
Mix the filling: Add ½ a can of enchilada sauce (or jar of salsa verde), sour cream, cream of chicken soup, and diced green chiles. Mix it all together.
Prep the tortillas: Grab your tortillas, butter each one, and cut into quarters.
Layer it up: In a big (double-stacked, because this baby is heavy!) aluminum baking pan, start layering: tortillas → chicken mixture → enchilada sauce → olives → cheese. Repeat until you’ve got about 4 layers, always finishing with a big ol’ layer of cheese on top.
Bake: Cover with foil and bake at 425°F for 45 minutes. Remove foil and keep baking until the casserole is bubbly!!

You could also serve with fresh cilantro, avocado slices, or extra sour cream if you’re feelin’ fancy.
